It is saved again at the quality you choose. With a file-size limit, the best quality that fits is found first; the pixel size only comes down if it has to.
The date, camera, lens and exposure go back into JPEG and WebP copies. The location, the hidden thumbnail and the camera maker’s notes stay behind.
What changes
The pixel size (never larger), the compression, and the name if you add the size. HEIC becomes JPEG; a GIF becomes a still PNG.
With “Keep the date and camera details”: the date taken, camera, lens, exposure settings, artist and copyright — in JPEG and WebP copies.
The GPS location (unless you untick it), the small preview hidden inside the file, the camera maker’s private notes, serial numbers, and extras such as ratings and keywords.
